Little Stack of Heaven

Over the weekend I made some pancakes, and the more I have of them, the more I'm delighting in them. I started out with my family's basic pancake recipe and added in spices, fruit, and nuts. So here's the recipe:

Sunshine Stack Pancakes

Ingredients
2 C. sifted flour, plus 2 (or so) T. of flour
5 tsp. baking powder
2 tsp. salt
3 T. sugar
2 beaten eggs
2 C. milk
6 T. melted shortening or oil
Zest from one orange
2 tsp. cinnamon
1 tsp. nutmeg
1/3 C. dried cranberries
1/3 C. walnut pieces
Lots of cinnamon applesauce
Preparation
Sift together flour, baking powder, salt, and sugar. Beat eggs in mixing bowl, and add milk, shortening, and flour mixture. Stir until blended. Stir in the spices, zest, cranberries, and walnuts. If the batter is pretty runny, add in a few tablespoons of flour. I added in 2 T. for this batch.

Heat griddle or heavy frying pan slowly until moderately hot. Test temperature by sprinkling a few drops of water on it. When drops stay round and bounce about, the temperature is right. Grease very lightly before baking each batch.

Ladle or pour about 1/4 C. batter for each cake onto hot griddle. Bake until top side is full of bubbles that begin to break and edges are dry. Turn and brown other side. While the pancakes are cooking, microwave the cinnamon applesauce in a microwave safe container, such as a Pyrex measuring cup. I used about 3/4 C. of applesauce per every 2 large pancakes or 1 C. for 3. Microwave it until it is hot and a bit steamy (1:30 for 3/4 C. applesauce in my microwave.

Once the pancakes are done, place one on a plate, pour some hot applesauce on top. Throw on another pancake, pour some applesauce over it. Continue until your stack is complete, then douse the whole stack with the rest of the applesauce.

We ate these all weekend and I am glad we can continue it into the week. This is so satisfying, especially with all the snow outside. The orange and cinnamon play well together and it is warm like a sunshiney day. Enjoy!
